The Sparkling Sake Brewery
The Sparkling Sake Brewery was founded in Ely, Cambridgeshire, in 2020 by Naoki Toyota with a soft launch in June 2021 and the first official brewing season starting in October 2021.
It's the world and the UK's first and only brewery dedicated exclusively to the production of sparkling sake. The brewery produces sparkling sake by limited edition batches reflecting its underlying philosophy of impermanence and harmony with nature.
About 'awa'
'awa' is the debut sparkling sake product from The Sparkling Sake Brewery and is released on a limited batch basis.
The sparkling sake is produced by first creating a pasteurised still sake base then a second fermentation (unpasteurised) in each bottle. The batch is ready to be shipped when the fermentation is complete, providing the freshest naturally sparkling sake.*
*when pre-ordered or ordered upon batch release and shipped immediately upon the completion of the second fermentation.
The guiding philosophy driving the brewery is the beauty of nature's impermanence.
Impermanence describes a certain sense of beauty in Japan that is fleeting and in harmony with humans and nature.
If you look at the world of fermentation, you can find beauty in the lifecycle of microorganisms such as yeast and koji-kin (a friendly and magical mould). They each change themselves with respect to each other and the world around it; they are never quite the same at any moment.
Working in harmony with the microorganisms as they are at any given moment, The Sparkling Sake Brewery creates sparkling sake batch by batch made from rice, water, koji and yeast. Each batch is a work of art that expresses the beauty of nature's impermanence.

Naoki, the founder of the brewery, undertook rigorous and specialised brewing training in Nara, the birthplace of sake, under Mr Kurose*, known as one of the legendary sake brewers in Japan. In April of 2021, he subsequently started a small brewery of only 400 sq ft, located in the suburbs of Cambridgeshire, which is dedicated exclusively to producing naturally sparkling sake.
*Mr. Kurose is known as one of the representative sake brewers in Japan. He hand-crafts his products in Nara with an extremely limited edition run. He is called a "legendary brewer" by fanatics seeking his products. He had also achieved fame before getting into the sake industry as the brewer producing "Hyakunen no Kodoku' - a premium shochu.
